A standard that I chaired that I believe sticks very close to RESTful principles is IEEE 2030.5 (Smart Energy Profile 2.0).  It is freely available at http://www.zigbee.org/Standards/ZigBeeSmartEnergy/ZigBeeSmartEnergy20Standard.aspx and also available from the IEEE website.

In terms of books with good examples, I'm a big fan of:
"RESTful Web APIs" by Leonard Richardson, Mike Amundsen, and Sam Ruby (http://shop.oreilly.com/product/0636920028468.do)
And its predecessor:
"RESTful Web Services" by Leonard Richardson and Sam Ruby (http://shop.oreilly.com/product/9780596529260.do) which is now freely available at http://restfulwebapis.org/rws.html
