OK, so I'm not going crazy! I could have sworn I had seen that before. 
We use an anti-spam MX gateway, so needed to have anti-spam turned off 
on our systems, so I wasn't using those features. I flipped on Spam 
Filtering with one domain and found it. The next question... how does it 
know where to look for trash? Or does it look in all folders for like 
the 'T' flag? If so, this looks more perfect as it can be controlled on 
a per Virtualhost basis instead of system-wide.
