OK, ignore the question about php-fpm pools, I didn't have php-fpm set
as the processor, once I did that, the pool was created.

Now to figure out the Nginx part because i am still seeing that no
virtual websites are listed.

What does:

Directory for links to new virtual host files

in the module config setting used for?
