I'm currently using JFreechart with WO to generate graphs which are converted to png format, then cached (as NSData objects) to a database. Nice bit of kit, though customisation requires a lot of subclassing. Also using the jibble eps graphics package http://www.jibble.org/epsgraphics/ to convert the charts to eps for integration into pdf files. Jfreechart works great - the output that it produces is much better than something like gnuplot IMHO. We've used it to build a graphical representation of the WOStats page for our WebObjects applications.
