I'm currently using JFreechart with WO to generate graphs which are
converted to png
format, then cached (as NSData objects) to a database. Nice bit of kit,
though customisation 
requires a lot of subclassing.

Also using the jibble eps graphics package
http://www.jibble.org/epsgraphics/ to convert
the charts to eps for integration into pdf files. Highly recommended but not
free..

Jfreechart works great - the output that it produces is much better  
than something like gnuplot IMHO.

We've used it to build a graphical representation of the WOStats page  
for our WebObjects applications.

We've also used it to build servlets that generate graph images  
(as .jpg(s)) which can then be very easily embedded in html, wiki, or  
even webobjects pages.
