Just realized I didn't reply-all this originally… There is a way to hide profiles from that form using the INonInstallable marker (http://stackoverflow.com/a/10481677/135550), though we could certainly make it more obvious. We also do a poor job of labeling install profiles -- "Installs plone.app.something" is a horrible description.
