I think there are probably three main school related themes:

1) Delivery of distance learning/elearning as you indicated ( this is my
main area of interest - I do industrial/commercial distance learning content
and delivery). Tthere are lots of existing standards defined in this area -- 
http://www.adlnet.org, http://www.aicc.org , http://www.imsglobal.org/ that
could be  implemented in a Plone/Zope context)
2) Tools to support teaching and learning in schools as you indicated
3) Tools to support administration of schools (http://www.sifinfo.org/ is an
organization promoting standards in this area for example).


In some cases there is overlap in need between the themes.

I think Plone has potential for all three.
