Putting aside all DIME and MIME issues, a specification
that isn't practiced in code is of little value and
generally indicates that there is a problem with the
specification itself.

By that admission, MIME is valuable, and since folks
are already implementing DIME I'd say that for some
folks it obviously has value too.

You mix up creation of MIME profiles with choices the developer do. One
is protocol specification and the other writing of code. Two different
things.

I talk about protocol specification, not code writing.
