Frank nailed the problem.

I looked around for an XFree86 log file. I found one in /var/log; near the 
top it told me it was using

         XFree86.config-4

whereas I had changed XFree86.config

I made the change to the right file and the system seemed rock solid all 
day yesterday; I opened as many big windowing programs as I could and 
nothing bad happened. I can play Asteroids while emacs is LaTeX'ing a file 
and my Tea Cooker is letting me know when to drink my tea!

It is -- sadly -- one of the virtues of M$ software that the configuration 
setups are (for uncomplex problems) very "flat", that is to say, the 
unsophisticated user knows where to look and how to make changes. When I 
used to take care of Pick O/S machines in the 1980's, I knew where 
everything was, but (a) I got paid to know that and (b) there really wasn't 
all that much to know. I do find it not always easy to know where to look 
for stuff on my Linux systems.
