I second using Slackware to learn from.  I'm a big slackware fan.

However, once you feel pretty comfortable with at least one of the major 
distros, I would suggest you learn in more depth by building your own distro 
with Linux From Scratch:

you don't have to build a complete desktop or server distro that way (at least 
not to start) - it would be instructive to build a boot/root floppy pair that 
would run off a ramdisk the way most installers do.
