I use a Dock App called Mount.app. You can mount anything that is on
your fstab with a single click. You have to add the right thing in your
/etc/fstab to be able to mount your mp3 player as a user, and that's
it. 

I don't know if Mount.app is on the ubuntu package repository, you can
look if you found it. If not, get the sources from the homepage, there:
http://mountapp.sourceforge.net/ and compile it, it's a small app anyway.
