Depending on where you are hiking, it is often OK to burry coffee grounds in with your poo. It is like apple cores and banana peels, all organic matter that will decompose. When out hiking I consider a cat hole the same as a compost heap. As long as it is small amounts, well buried and scattered around, it won't hurt the woods or a wet area. In a desert, of course, it is different. That stuff may take a couple decades or more to break down. Better to pack it out. Same for rocks and hard ground. Generally if you have to worry about leaving your poo, then you need to carry it out.

I still go with the Coghlans coffee filters (http://www.coghlanscampinggear.com/coonecupcofi.html) and good old finely ground french roast - real drip coffee in the morning. I don't use sugar or creamer.
Downside is having the weight of the damp used coffee grounds to pack out. I gladly do it for the great cup of brew in the am.
