What you can do is enable your ipod to act as a storage device (in itunes) and upload plain text files onto the ipod (to the notes folder when viewing the device as a drive). Under Extras - Notes you can read the text files. The only trouble is the formatting. Sometimes you have to deal with broken lines and other issues. With the iphone and touch it's a better screen and all that, but it's possible on the smaller ones.
