One possibility in Windows:

Install AbiWord again in another Program Files folder named

AbiWord Esperanto and then when the install wizard asks for the default
language select Esperanto.

Another way, if you don't want a second AbiWord installation:

On the menu bar Select  Tools... Set Language

Scroll down and select Esperanto, and check the box to make it the
default language for the document.
