This seems to be about the installer, not the jedit program. Are you trying to use the mac installer? Use the java based installer. However, installing Jedit with the java based installer on Mac takes a lot more to get functioning (and I'm speaking from experience albeit around 10 generations out of date (Sierra?). And an M1 'mac' is not really a mac, but in terms of hardware, more of an IOSlike device with a maclike interface, so good luck.
