Translation update for Intro and Shortcuts

Hello, I have made minor changes to the manuals Introduction and Shortcuts, in both languages Catalan and Spanish 1. All names of manuals are now dynamic text fields (info insets). 2. Most menu references have been replaced for info insets (File > Save and the like). Changes made with Change Tracking on. Note that all strings in the tables of the Shortcuts manual are left as static (normal) text. I don't think it is a good idea to use (abuse) info insets in this case.
