In general, if there is some math construct that LyX does not natively 
support, you can do the following. A math macro has two 'slots' where 
you can enter something, labeled TeX and LyX. The TeX part is what will 
actually be output. The LyX part is used for on-screen display in LyX 
itself. Now here's the thing: If the TeX part is empty, then LyX does 
not output any sort of definition for the macro. So you can just define 
a \pdv math macro with empty TeX part, and write something in the LyX 
part that looks nice for display.

There's no way to make unused optional arguments look nice, so far as 
I'm aware.
