But I can't see any way to apply it from the GUI. Edit> Custom Text Styles> Code. You can bind "flex-insert Code" to a key sequence if you wish, or make a toolbar button for it. But that is basically just a font, like <code> in HTML. It doesn't do syntax highlighting or anything. So you may want something a bit more sophisticated. But it's probably just a matter of defining a new LaTeX command that will do what you want, and then mimic the Code definition as far as LyX is concerned.
