As indicated in other pages that I cannot remember the URL of, the most 
recommended enconding is UTF-8. ISO-8859-1 is for "western languages" 
and does not contain the Chinese (and other Asian) characters.
Hence, convert all your catalogs to UTF-8 (which should be trivial), and 
start playing around with Chinese.
Plus by having UTF-8, you can be sure to represent most, if not all, 
languages on Earth and beyond.
