Just like you can add rows with escape+down (*), you can add columns 
with escape+right. Or, use the buttons on the toolbar (four greenish 
buttons for creation and four reddish buttons for deletion).

This is all with 'matrix', no other things involved.

(*) might be meta+down and meta+right instead
