Dear Vincent,

F9, F10, F11 and F12 perform the fold/unfold (see definitions in 
TeXmacs/progs/dynamic/fold-kbd.scm).

Of course, you may assign the scheme command "(alternate-toggle 
(focus-tree))" to you favorite shortcut.
