Yes.

Yes. As much custom schemas as you want, provided these schemas are:
DTD, W3C XML Schema 1.0 (not 1.1) or RELAX NG schema.

First make it work in the desktop application: custom schema with
possibly its CSS stylesheet, its specialized commands, its specialized
toolbar, etc.

If it works in the desktop application, then it will work in the Web
Edition without any change. (When starting, xxeserver, the back-end of
XMLmind XML Editor Web Edition automatically loads the configurations
and add-ons set for the desktop application.)

1) Download XMLmind XML Editor Evaluation Edition, the desktop app, from
here:

https://www.xmlmind.com/xmleditor/download.shtml

2) Create a configuration specifying to XMLmind XML Editor (whether the
desktop app or Web Edition) which custom schema to use and possibly also
the CSS stylesheet, the specialized commands, the specialized toolbar, etc.

How to do this is explained here:

XMLmind XML Editor - Configuration and Deployment, Chapter 2. Writing a
configuration file for XXE,
