There is a free (but not open source) software I used awhile ago called CamStudio which allows you to almost do what you did for the Burrokeet demo Ross (you'd record the screen movements, but would have to overlay your voiceover using something like VirtualDub, which is FLOSS). Trying to track down the developer's homepage it seems that they've either stopped supporting it, or if RenderSoft is really the developer (made some educated guesses to track them down), then CamStudio evolved into RoboDemo, which has now evolved into Macromedia's Captivate, and now costs $499US to purchase.
