"Buttons" in a message buffer that evaluate to plain text?

Hi,

in the German UseNet, Call for Votes (CfV) are posted to be
replied to by mail.  They have the "syntax":

In each of the "[]"-bracketed fields, either "JA" (yes),
"NEIN" (no) or "ENTHALTUNG"/"ANNULLIERUNG" (abstain/annul)
can be entered.

It would be nice (and probably useful in other cases,
whether mail-related or just text files, as well), when
setting up the message-mode buffer for a reply to a CfV, to
replace those brackets with some "buttons" that let one
cycle through the available options that get replaced with
their plain text values when the reply is sent (or in the
general case the buffer is saved).

With Emacs 30.2, what is the best practice to achieve that
plain text ↔ "buttons" conversion?  Is there an existing
ELPA package that does something similar?
