Hi,

The easiest way to do this for C and C++ is to do:

M-x semantic-c-describe-environment RET

and then scan through all the various stats about the C buffer.  It 
should list what EDE project you have, what the include paths it found 
and where it found them, and along list of preprocessor symbols.

If you don't see EDE based data, sometimes all you need to do is:

M-x revert-buffer RET

to force Emacs to re-init the buffer's EDE data from any changes you made.
