Hi Frank, I'm glad you like the MD-11. I've been working hard on it for nearly 10 years now! The default autopilot is disabled since it doesn't work anything like the real. The autopilot can be used by the cockpit controls, or the pop-up window selected by F11 key or 2D Panels -> AFS (AutoFlight System) Panel. The guide you mentioned is NOT a development status guide, it is an operating manual. If you have a read of it, you will know how to operate the autopilot in the MD-11. The file is currently a pdf on GitHub but I plan to migrate to a dedicated website for easier navigation.
