I download a lot of DEM data from Seamless and you can download it in tiles.
There is a button called "Define Area By Coordinates" on the left side under 
"Downloads" that allows you to select a bounding box by entering bounding 
co-ordinates.

Then at the top of the download preview page is a link called "Modify Data 
Request". Pressing that takes you to another page where you can change the 
format of the data to ArcGrid, GeoTIFF, BIL and GridFloat.
