Octet string:  unstructured binary data in 8 bit units (c.f. MIME
application/octet-stream).

IA5: the ITU-T designation for ISO 646, whose US, and I think
reference version, is called ASCII.  There may be subtleties, e.g.
allowing national variants, or particular new line representations.
(NB, like ASCII, this will be a strictly 7 bit code.) (c.f. MIME type
text/plain; charset=us-ascii)
