q1: How would the existence of said STUN server be made known to the 
calling client?

q2: We currently use UPnP to address this particular situation, i.e. if 
we know that we are behind 2 NATs and the person we want to call is 
behind the same topmost NAT, we get the WAN address of our first-level 
NAT box using UPnP and give that to the callee. Is UPnP, or any other 
protocol for querying the WAN address of the NAT box, used in ICE?
