To post a follow-up...

I tried the same on my server at home that is running with simple nvidia 
dmraid1, and grub got screwed there too :-(

As it turns out grub didnt like to be run under a 2.6.17.[8,11] kernel 
at all, but rebooting with a rescue iso that whas using 2.6.12 series, 
it worked as it shoud...

And now I see that the upcoming 2.6.17.12 has several dm related fixes, 
so maybe it will make the difference, I'll let you know...
