Back from a non-technical detour, I seem to remember having (ab)used the VIDEO_MODE variable to inject some extra options in the past. It's all kinds of wrong, but looking at the config files, that should do the trick for all/most menu entries (incl. rescue, expert, etc.), but I haven't toyed with it recently. This might may or may not be better than adjusting one or two entries specifically, depending on the considered use case.
