I'm fine with Slack (already on those of Gradle and Kotlin), GH issues 
could work as well.

I would probably first focus on differences in source code (applied 
patches) and generated binaries (installed layout, optional features, 
optimizations etc) and only investigate build scripts/configs/logs when 
searching for explanations.

Running the test suites on Debian JDKs and publishing results would 
definitely be interesting. I'm not sure we are running them currently (I 
didn't check).

At this point all these are backlog items though, I'm planning to get 
back to these later.
