Hello Emmanuel and thanks for the feedback.

We are a public radio broadcasting company that hosts part of its
IT infrastrcuture inhouse in a mixed environement (Windows server,
debian, proxmox, ubuntu server)

Our debian servers have exceptionnal uptime performance (many hundred
days)

  09:35:49 up 1071 days, 21:37,  7 users,  load average: 1.60, 1.37, 1.24

We use them for mail, file sharing, web hosting (test), ticketing system,
dns, wiki, and monitoring our audio streaming, and are pretty satisfied
with the system. System updates are flawless, software is very well
tested, I personaly came across a single bug in all the software we're
running on  and it was upstream (shorewall), community is helpful... It
checks a lot my boxes.
