knoppix Rocks

Hi all I'v just downloaded the 3.3 version of knoppix.

I'm looking to create a similar system by only for the server components .
exim ,apach,samba....
Every thing runs for the cd, exept the configs reside on a usb flash drive
or another cdrom, so thay can be edited ..

What I would like to know is how can I remove the packages i don't need
and add the ones I require to the knoppix cd ?
