the ">" is exactly the trick to go into the submenu.

So I did:
grep gnulinux-advanced /boot/grub/grub.cfg

and find the advanced menu which is similar to yours, but with different 
guid.

Then
  grep advanced /boot/grub/grub.cfg

to see the different menu entries, choose the kernel, add..

sudo update-grub

et voilà, back in business.
