I was about to reflexively mention that I prefer using `ddrescue` (from
`gddrescue` package) because it gives nice progress info and doesn't need
to mess with blocksizes, but then figured it would be beside the point
of this thread, until I noticed that it would actually have taken care of
the system freeze because it (can) keep track of its progress so you can
re-run it later to finish:

    ddrescue --force /dev/disk_to_copy /dev/disk_to_copy_to /root/progress-status.map

Ddrescue will store in /root/progress-status.map the current progress,
so that in case of a crash, power failure, or you getting bored and `C-c` the
process, you can restart it later and it will pick up from where it
left off.

It's a really nice tool.
