Same here: four-letter basename for the partitions, and the
basename is written on the case with a marker pen.

I guess the closest approach with GPT disks might be to subvert
the disk GUID, which can be manually set. (It gives you a very
limited vocabulary for spelling out words.)

OTOH, modern disks are already uniquely named, should you just need
identification, with their WWN and Manufacturer/Model/Serial Number.

I don't know the timing for when such information becomes available
to software, relative to the symlinks under /dev/disk/.

As for the sorting problem posed, do you see any relationship between
the SATA Port numbers you listed and the /dev/disk/by-path/ paths they
end up being named as?
