The equivalent of /etc/fstab is still /etc/fstab
(/System/Settings/fstab), but to boot other distributions you'll want
to edit the bootloader configuration under /System/Kernel/Boot. You
might prefer to use the bootloader from one of those other systems and
configure it to boot GoboLinux instead, though..
