Simply symlink /etc/localtime to the appropriate entry. Here's mine:

hisham@pointer ~]ls -l /etc/localtime
lrwxrwxrwx 1 root root 46 Feb  3 18:19 /etc/localtime ->
/System/Index/share/zoneinfo/America/Sao_Paulo
