Honestly, Gentoo is very easy to install without the installer. The only real difference between the installer and doing it by hand is the amount of typing. Both follow the same structure for installation, the Gentoo Handbook. If you're looking to install Gentoo, then follow the Handbook to the letter and you'll be golden.
