Hey,

I would delete your kernel source tree, unpack it again (so you know it is 
clean) and not prune out so much stuff.  It may or may not have been the SMP 
support that broke it, but I would examine why you are recompiling the kernel 
and just satisfy that.

If it is merely to upgrade to a later version, then only touch things you need 
to put in to work with your hardware.  If you are trying new features, then 
add them in.  Try not too pull too much stuff out until you have your kernel 
working.  Then later you can experiment a bit more but _do_ expect this to 
happen.
