It is also posible that you are specifying the wrong drive and or partition. I would look for "Partition check:" and the lines that follow. Make sure that looks sane. You should be able to use Shift+PageUp to see this if it scrolled by. You can pass the "rootfstype=xfs" kernel option to force it to use xfs vs triing all the compiled in file systems in successtion until one works. I would be supprised if this worked though.
