During the installation you download and install the kernel source code, and
compile and configure it to your liking. Gentoo provide their own
kernel+patches, but you can also choose just about any other kernel you
choose. Here's the current list:

I've just switched from the Gentoo kernel+patches to the latest Alan Cox
kernel.
