ACPI is fine. I always make sure to have the latest patches for the
kernel sources. You can explicitly turn APM off...

(1) Yeah, and (2) no. As long as you know what devices are in the
machine it's not really difficult. emerge the appropriate sources
under gentoo, make menuconfig and make bzImage modules modules_install.
Where you put the kernel will depend on your boot loader.
