We've been running UM 3.1 on Debian Sarge in a high capacity, high availability scenario for a few months now with no such memory troubles. Our configuration uses direct routing instead of masq but otherwise is fairly similar to what you have. Out of curiosity, are you seeing anything in your log or debug log files? What versions of the other UM packages do you have in place? And what kind of load is being placed against the services?
