The grub.cfg file provided by the LFS book (or the BLFS book in case you
are using UEFI) contains timeout=5, so GRUB should always wait for 5
seconds even if there's only one menu entry. Then you can type "e" to
edit the commands or "c" to type new commands when the menu shows up, as
the message below the menu says.
If you've set timeout=0 you'll need to press a specific key (I cannot
remember which one either) as Bruce said to show the menu, then use "e"
or "c." And I'd say timeout=0 is another example of "deviating from the
book causes trouble."
