Failing on Boot

It seems whether I run the prompt menu by running mondoarchive, or run 

mondoarchive -O -V -i -s 4480m -d /mnt/backup/ -I / -E /mnt/backup/ -T /tmp -9

I am able to get a backup completed, but fails on the creation of the bootable iso. When I reboot from backup it brings me to the screen and when I choose interactive or iso it is searching for ‘CDROM’ and where it lives. 

Is it possible to create a bootable iso using Mondo/Mindi for Centos 7 backup on a USB drive? The unique problem with this particular box is it does not have network access, so I am unable to offload a mount/snapshot copy to any online shared drives (Nfs/windows share/etc). 

Any advice is appreciated.
