I think you have an issue during the restoration of grub:

Content of /mnt/RESTORING/boot/grub2/device.map
-------------------
# this device map was generated by anaconda
(hd0)      /dev/vda
(hd1)      /dev/vda
Now I'll use grub2-install
Launching: chroot /mnt/RESTORING grub2-install --force /dev/vda
Installing for i386-pc platform.
grub2-install: error: cannot find a GRUB drive for /dev/vda1.  Check your device.map.
grub2-install returned 1


Your device.map file looks worng to me.
If grub2 can't be reinstalled you won't boot.
