Please check out https://github.com/ntop/nDPI/blob/dev/example/protos.txt .

In ntopng you can specify a protos.txt file with the -p option

     [--ndpi-protocols|-p] <file>.protos | Specify a nDPI protocol file
                                     | (eg. protos.txt)
