You could try the SnapGear/Cyberguard distro (free download).
It includes support for the 7751 (we ship products based on it). It is
the same package as the uClinux-dist you can find mentioned in various
places.

Has a bunch of pre-canned Hitachi platforms included, 2.4.26, glibc and uClibc
and lots of apps.  You can find more info on using it in it's top level
