The problem is a broken cpio. Try 

ACCEPT_KEYWORDS="~x86" emerge cpio

The masked version of cpio has the symlink-patch included.

Additionaly, be sure to use the mksquashfs from the pxes, not the (newer) 
gentoo one. The pxes-ebuild is broken.
